Betty Jane Coble Jones, age 80, went home to be with her beloved mother, Dorothy, and her Lord and Savior on Monday, December 29, 2025, while under the loving care of hospice and surrounded by her family.
Betty was born on January 4, 1945, in Lumberton, North Carolina, to Grover Lee Coble and Dorothy Small. She was raised in Bladen County, North Carolina, where she worked alongside her mother in the cotton mills. In the 1960s military service brought the family to the Liberty County area, where they would settle and make their permanent home.
Betty and her mother owned and operated several well-known restaurants in the community, including The City Tap Room, Pizza Lounge, and Vining’s Kitchen on Highway 17. She also worked faithfully for many years at Poole’s Deli. Betty was known not only for her strong work ethic, but for her generous heart and caring spirit.
A loving and compassionate person, Betty dedicated much of her life to caring for others—it was truly her calling. She was deeply devoted to her mother, whom she lovingly cared for during her illness, and she extended that same selfless care to many others who needed her. She would have had it no other way.
She was preceded in death by her mother, Dorothy Vining, and her brother, Bobby Coble.
Betty is survived by her five children: Robert Carroll (Gabriela), Margaret “Cookie” Bess (Jason), Ray Carroll (Renee), Tommie Johnson, and Katie Howard (Tony); 19 grandchildren; 17 great-grandchildren; her brother, Larry Vining (Kris); her sister, Katrina Daniels (Mike); and numerous nieces and nephews whom she loved dearly.
A Celebration of Life will be held on Sunday, January 4, 2026, at 3:00 p.m. at Thomas L. Carter Funeral Home in Flemington, with Pastor Robert Long officiating.
Betty’s life was a testament to love, service, and devotion to family. She will be deeply missed and forever remembered.
